zucchini bread




The garden here is producing zucchini on overdrive.  I have more squash blossoms than I know what to do with.  We have summer squash and zucchini both.  What do you do when you still have 2 that are left from the store?  Make zucchini bread of course and hey let's dig in the fridge and throw in those blueberries that are about to go bad.  This is a super easy and moist bread.  You can also substitute your favorite GF Flour Blend.  I us Pamela's Artisan Blend when I am making GF.



Ingredients
  • 3 eggs, lightly beaten
  • 1 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 2 1/4 cups white sugar
  • 2 cups shredded zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 2 cups frozen wild blueberries (you can also use a pint of fresh blueberries)
Preheat oven to 350 degrees F (175 degrees C). Lightly grease loaf pan or muffin tins.
Shred zucchini. Set aside. Once shredded, squeeze zucchini to remove excess water. Discard water.  I cheat and put mine through the food processor.
In a large bowl, beat together the eggs, oil, vanilla, and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, and cinnamon.  If adding frozen fruit remember to coat lightly in flour.  I just tossed the fresh blueberries in.
Pour into greased tins or loaf pan.  Bake bread for 50 minutes or until knife comes out clean. I baked the muffins for 17-20 minutes based on my oven.
Let cool 20 minutes and enjoy.

homemade fermented sauerkraut

Last month we enjoyed a great evening with our friends, and we had a a little domestic night.  “S” and “J” taught Mr. Miller and I to make Homemade Fermented Sauerkraut.  Being that I am married to a German he was all for this.  It turned out amazing.  So crisp and fresh, not to mention all the digestive benefits that fermented food has to offer.  Are you ready for the long list of ingredients?  Here is the cast of characters:

I love the fact that there is no vinegar.  In minutes I can put together a healthy side dish that 3 of the 4 members in my family will eat.  Cameron will succumb and join us at some point.  Henry loves it! 

Here is the skinny on making your own kraut.

First peel the outer leaves from your heads of cabbage.  I just discard them.  Next quarter your cabbage and remove the core.  I use my mandolin because Mr. Miller likes the uniformity of the shreds, for me it was that it was the quickest and easiest method.  I will let him think that I like the his reason best too, but really we all know it is my kitchen and my way. Tee Hee Hee.  Notice my favorite big green Pyrex bowl.  Isn’t she pretty.  I like how she matched the cabbage.

Next put 2 heaping tablespoons of salt over the cabbage.  Now “big greenie” could only hold one head at a time so I used 1 tbsp. per batch.

Let me jump back a step here.  Picking your cabbage.  Using organic cabbage is important as chemicals used on non-organic cabbage could inhibit the fermentation process.  Red or Green cabbage is fine.  Remember the fresher the better.  We decided we are definitely going to start growing our own here at Green Acres.

Now for the fun part.  Stress relief time!  Its summer and our lovely children are home with me all day being perfect angels, right?  Not ok well they are so bad but they can “grate” on each other and ultimately me by the end of each day.  Take you stress out on this lovely cabbage.  Go ahead show it who is boss.  It’s not going to complain.  Pound it, squeeze it or whatever it takes to get the job done.  You want to do this until liquid starts to form on the shreds and in your bowl.   Your amount of cabbage in the bowl will decrease.  Don’t be alarmed.

Once this has happened after about 8-10 minutes you can fill your container.  Our friends use a jar with a rubber gasket but I find canning jars do the trick just as well.  Add the cabbage to the jars by layers and pressing down in between.  We used the end of my bamboo spoon to do this.  Mr. Miller has already figured out that he needs a 1 1/2 inch dowel rod cut for the next time.  Who is this man I married?   Just kidding I love the fact that he wants to participate in my homemade Caroline Ingalls meets Olivia Walton adventures.  Never a dull moment around here.  Ok where was I?  Right the jars.  You will see juice above each layer as you compact.  Leave about 1-2 inches of space in the top of the jar.  Make sure the cabbage is below the liquid line.

Top with the lid loosely.  It’s important that the lid is not on too tightly as gas and bubbles will form during the fermentation process.  Remember they must be able to escape the jar, otherwise you could end up with a mess on your hands.  I also place ours on a towel incase we have any seepage from the top of the jar.  I set ours on the counter for 10-12 days.   You can cover them with a towels.  Feel free to start tasting as soon as 5 days.  Our perfect time was 11.

When it is right seal that puppy up and put in the fridge.  You will thank me just as we thank “S” and “J” for sharing the world of homemade fermented sauerkraut with us.  Now if I could just get my hands on a crock like my granny used to make hers in?  Hmmmm…. maybe time for some Urban Treasure Hunting.

almond butter protein balls

 

I visited a wonderful new place here in Kansas City called t. LOFT.  Some of the RHOSTM and I gathered there on Wednesday morning to “catch up”.  Our resident “foodie”, Anna, planted the seed in mine and Kristen’s mind a couple of weeks ago when we started this amazing 28 Day Detox Boot Camp journey together.  So we called Courtney and Beth who also believe in a healthy and clean eating too.  Oh were we excited and pleased.  First its any kind of tea you could want and the couple that owns the place live a completely Gluten Free lifestyle.  SCORE.  There is no gluten what so ever on the premises. The best part for me is that a fellow Alpha Phi from Washburn, “J”, is doing all the baking and cooking there.  What a blessing to run into “J” that morning.

I sat there looking at the menu like a kid in a toy store.  Gluten Free, Clean and Paleo choices awaited my decision.  I couldn’t believe it I felt like God had planted this little sanctuary right in front of me.  I decided on the suggestion of “For Her” decaf tea and a protein ball.  I love that even had the ingredients listed so I could check and make sure that all items listed were ok on the Detox.  It was an amazing little protein ball.  I thought right away I know I can make these at home for Mr. Miller and I.  So here is what I came up with and added the Fit Essentials Vanilla Protein Powder.

 Almond Butter Protein Balls

  
1/2 c. almond butter

1/4 c. raw agave nectar or less

1 scoop chocolate Fit Essentials Protein Powder*

1/4 c. ground flax seed

1 c. dry gluten free oats

1 tbsp. coconut oil

Heat the Almond Butter, Coconut Oil and Agave Nectar together. Add protein powder, oats and flax seed. Mix well. I use my food processor. Use Pampered Chef small scoop and make balls. It should make 18 bite size balls.

*may substitute with Vanilla Powder

Put in sealed container keep in fridge.

clean chicken tortilla soup

I just had to share our dinner with you last night.  I made a Clean Chicken Tortilla Soup.  We added brown rice to make it stretch and oh my!  We are loving our newly adapted lifestyle of clean eating thanks to the Arbonne 28 Day Detox Boot Camp. The evening meals are so amazing.  You wouldn’t know you were on a Detox plan.  Clean eating is really the way to go.  Last nights menu called for Chicken Tortilla Soup so I cruised Pinterest and picked up some ideas and then put a little Green Acres love in it.  Boy it was amazing, I will say “slap your Mama good”, sorry Mimi I couldn’t help myself.

Clean Chicken Tortilla Soup

1lb Organic Free Range Chicken

32 oz. organic Chicken Broth

1 can Organic Diced tomatoes with juice

1 can black beans, rinsed and drained

1 can garbanzo beans, rinsed and drained

2 tsp. cumin

2 garlic cloves crushed

1 tsp. onion powder

1 cup fresh salsa (no vinegar)

1 cup cooked brown rice

fresh spinach – about 2 handfuls

guacamole

Rinse chicken add to crockpot.  Combine broth, tomatoes, beans and spices.  Pour over chicken.  Add Salsa.  Cook on high 5 hours or low 7-8.  Shred chicken when done cooking.  Add cooked brown rice and spinach.  Let set in crockpot for 20 min.  Serve with Guacamole on top.

garden gifts


Just before the rain rolled in this morning I walked through one of my happy places, the Green Acres Garden.  The place where we have for the past 4 summers toiled, planted, picked pesky bugs, slapped mosquitoes and for me, ruined many a manicure.  I love this little patch of heaven.

Oh, how I love our Garden so.  This morning to my delight we found lots of Bell Peppers, jalapeno peppers and finally my tomatoes are coming around.  We have had a crazy tomato year.  Lots of vine, not many fruit and the fruit that was showing up was a salad bar for our new puppy and the tree rats.

So the question was raised ~ what to make today?  It looks like Tuna Pasta Salad, Jambalaya for dinner and possibly going to make a batch of pickled jalapenos for my Mr. Miller.

Yummy Crockpot Jambalaya


  • The Cast of Characters
    • 5 c. chicken broth 
    • 1 can black beans*
    • 4 peppers – any color you want, chopped
    • 1 large onion, chopped
    • 1 large can of organic diced tomatoes (leave the juice) or 2 small cans
    • 2 cloves garlic, diced
    • 2 bay leafs
    • 1 lb. large shrimp, raw and de-veined
    • 1 pkg kielbasa or Andouille sausage
    • 2 c. okra (optional)
    • 3 tbsp. Cajun Seasoning or a little less if you want
    • 1/4 c. Frank’s Red Hot (or hot sauce of your choice) 

  1. Put the Peppers, Tomatoes, onions, Frank’s, Broth,black beans,  garlic, bay leaves and Cajun seasoning in crockpot.  Set on low for 6 hours.
  2. About 30 minutes till end of time add cut up sausage and shrimp. Remember to take tails off and devein.
  3. While shrimp and sausage are cooking make up some rice or crazy some quinoa to change it up a bit.
  4. Serve over rice.
  5. Your mouth, tummy and family will thank you.
*My family loves black beans.  I know it is not a regular ingredient found in jambalaya.  The beauty of cooking is that it is your canvas, make it how you want. You could use chicken instead.

pancakes

Pancakes for breakfast not such a crazy idea right?  I have a secret to admit here, I have never made pancakes truly from scratch.  Yes, I have bought the Krusteaz Mix and done that but when I say from scratch I mean pull out your inner Olivia Walton along with the flour, baking powder, eggs and milk.  I have often spoke of my unhealthy affair that I have with Pinterest well when Junior Mint asked for pancakes one morning I got brave.  Really it just gave me an excuse for a rendezvous with my obsession.  I looked and found a great and simple recipe, of course it was a “good thing” as it came from Martha.  Basic Pancakes, so easy that Junior Mint got in on the action himself.  I found some blueberries in the old Frigidaire (pardon my reference to Steel Magnolia’s) and threw them in too.  Let’s just say it met to Junior Mint’s approval.  Saved the extras in a container for the next morning.

Confession time…yes I do still occasionally buy the frozen pre made cakes but I am going to do my best effort to make batches ahead of time and use my sealer to keep them ready and in the freezer.  The from scratch ones that is.  I am truly amazed at how easy, tastier and healthier it is to make “Simply From Scratch”.   We are trying to keep a handle on funds and so if I can stay on the exterior of the store to buy fresh and not the interior for processed it does help.  The other factor is trying to clean eat.  With Cameron’s Asperger’s clean eating is essential. Disclaimer:  We are not perfect nor experts but simply parents who want to do the best for him and ourselves.

A hot cast iron griddle, not a must have, is a big help.  Thank you Erika and Randy for this gift from years past.  I love it still to this day.

Voila’ breakfast is served.  If you haven’t tried the Organic Syrup at Aldi you are missing out.  At $3.89 a bottle you can’t beat it.

T B T ... Turn Back Thursday a glimpse from the past.

I thought I would try something here, TBT... Turn back Thursday a glimpse at the past.   I was sitting here this morning pondering over many ideas to write about.  Of course I got side tracked, hard to believe.  LOL.  Maybe Cameron's ADHD is rubbing off on his Mama.  I had just spent a lovely morning on the patio with my girl, Beth, I really feel that we are sisters from another mother.  We really get each other.  Our children go to school together and met there.  When we met we couldn't believe how much we had in common.  See what I mean I just got sidetracked again. When Beth left and I decided to get onto my day I got turned to my to do list and on it was Menu.

Ugh the dreaded MENU planning.  I do love it at times and well others not so much.  Menu planning does help save money and keep the rhythm of the Green Acres Kitchen together. So this is where the TBT comes into the story.  Remember when I did this story last November?  November 2012 Menu Plans  I decided to give monthly planning a go again.  This way it is done and I only have to make my weekly list for the store.  Simplicity at its best.

Here is what is on the Menu for September 2013 at Green Acres.  I have some new adventures ahead for us here at Green Acres in the City and on the home front.  This will truly help keep things in check.

Long time no post....

I know it has been a while since I have visited you all.  I have been super busy with Cameron's school and well I just needed a blogging break.  I am back and feel rejuvenated.

Today has been a "catch up" and planning for Thanksgiving day.  We are loading up the new family truckster {long story} and will be heading to Newton, Kansas for a 3 day get away.  Gigi will be turning 92 this year and my 3 Miller Men and I decided that we would take this Thanksgiving show on the road and head her direction.

I have to say this Mama is a wee bit excited herself.  Gigi, well lets just say she is beside herself too.  I am sure it is all she has talked about at the beauty parlor and card table on Saturdays.  She is a fabulous story teller.  Heck at 92 think of all the stories she has stored up there.

I just planned the menu with a little help from my past years menu plans, Food Network and my new friend Pinterest.  I swear there needs to be a 12 step program.  "Hello my name is Maeghan and I am a pinterest addict".  Here is a sneak peak as to what will be served at the Miller Farm this year.

I am beyond excited that for the first time I get to make Thanksgiving Dinner at the farm.  It really is going to be a Walton's Thanksgiving.  Yes, I am still obsessed with how Olivia Walton could keep everything under control and in order with all of those children plus bake the perfect pie.  I am working on that.
The boys are so excited to run the farm and help Gigi decorate for Christmas next Friday.  What are your plans?
