Apparently yesterday my post didn’t upload so here we go again.
Sunday: Mother’s Day my boys treated me to a day of being lazy at home. They cooked and did yard work and let Mama take it easy. Here’s what they made me for dinner.
Grilled Steaks
Focaccia Bread
Roasted Brussels Sprouts in EVOO and garlic
Cesar Salad
Green Beans
Baked Sweet Potato
Cabernet Sauvignon
Monday: Black Beans and Rice with Corn, Tomato and Feta Salad
Tuesday: Ranch Roasted Chicken, mashed potatoes, green beans
Wednesday: Chicken Corn Chowder, Tomato Salad {I am using the remainder of the chicken from Tuesday for this}
Chicken Corn Chowder
1 box of reduced sodium Chicken Broth ( If you have some in the freezer that you made even better)
1 bag of frozen hash browns
1 small bag of frozen corn
4 Tbsp. of white gravy mix
2 cups shredded Chicken
Put broth, potatoes and corn in pan. Heat through. Adding more chicken broth if needed. Add gravy mix. Stir to thickens. Add chicken and there you go. Could it be more simple?
Thursday: Grampie and Grandma are in town from Austin for my nephews graduation. We will be grilling.

Friday: We will be seeing how the day goes
Saturday: Nate’s Graduation Party
