My new winter comfort food

I have found a new favorite winter comfort food. Cauliflower Soup! I know you are saying "ugh!" but seriously this is amazing. In the last few week I read 2 blogs that had their own recipes posted, so I thought and looked at both and came up with one based on what I had in the pantry. Here is what I came up with:


Creamy Cauliflower Soup


1 bag frozen cauliflower
3 carrots, peeled and chopped
1 med onion, chopped
3 garlic cloves
2 tbsp olive oil
6 small yukon gold potatoes, cubed with skin on
salt and pepper to taste
4 cups NSA chicken broth
1 cup milk, I used whole

In a 4 quart sauce pan saute olive oil with onions and carrots until onion is translucent. Add garlic for a minute, make sure not to scorch. Add broth, cauliflower and potatoes. Salt and Pepper to taste. Bring to a boil until potatoes and cauliflower are tender. Remove from heat. I then add 1/2 of soup to my food processor, you could use immersion blender too, I pureed it and while doing so I add 1/2 of milk. I then transferred to serving bowl and did the second half. This would be easier with an immersion blender but I do believe in using what you have.

I served this with a pinch of shredded cheddar on top and "OH MY!" this was yummy! I think next time a few drops of Louisian Hot Sauce and it could be a keeper!

  1. I've made the Moosewood Cookbook version twice in the last month -- I'm addicted to it. There is something very comforting about this soup.

  2. Califlower soup is one of my faves. It's a great cold weather soup, isn't it? Yours sounds yummy!
