German Bean and Sausage Soup

OK so it is a dreary day! Misting rain, gray and fall like so I felt it was a good soup recipe day. A couple of weeks ago I talked about this soup on my Facebook page and everyone wanted the recipe so here it is! German Bean and Sausage Soup

1 tsp olive oil
1/2 C onion
1 Cup carrots, chopped
1 clove crushed garlic
1 tsp dried parsley and majoram leaves
1 Cup potatoe, peeled and cubed
1 2/3 Cups Beef Stock
1 package Turkey Kielbasa, cut into slices
15 oz can Beans, I usually used kidney or pinto
1 Cup peas
You could also add 1 can of Green Beans


Heat oil in saucepan over medium heat. Saute' onion 4-5 min or until tender. Add carrots and next 4 ingredients. Season with salt and pepper to taste. Add Broth. Bring to a boil. Reduce heat to low, cover and simmer about 15 minutes or until vegetables are tender. Add sausage and beans. Cook until thoroughly heated.
